Heat oven to 425°F.
Remove one pie crust from pouch; saving the other for another recipe.
Unroll on lightly floured surface and roll into 12-inch round.
Place dough on a large cookie sheet lined with parchment paper.
In small bowl, mix sugar and apple pie spice.
Sprinkle 1 tablespoon of the sugar mixture over the crust.
Arrange apple slices on crust, leaving a 2 inch border along the edge of the dough.
Sprinkle apple slices with remaining cinnamon-sugar.
Gently fold the edges of the pie dough up over the apple slices.
Brush the edges of the dough with the beaten egg and then sprinkle edges of the dough with sanding sugar.
Bake 30 minutes or until apples are tender and crust is lightly browned.
Serve warm or at room temperature.
