A hearty vegetable bolognese sauce, made in your Instant Pot for a quick, healthy meal the whole family will enjoy!
Add all the ingredients to the inner pot of your pressure cooker.
Stir well to combine.
Close and lock the lid of your pressure cooker, making sure the steam release knob is set to sealing.
Press manual and cook on high pressure for 25 minutes. Allow a 10 minute natural release and then quick release the remaining pressure.
Open the lid carefully and stir all ingredients again, taste and add additional salt and pepper or Italian seasoning to taste.
Serve over cooked pasta, spaghetti noodles, spiralized zucchini noodles or spaghetti squash.
