I’ll give you a hint. It involves cookies! That’s right, cookies.

Did you figure it out? I guess the picture gave it away, didn’t it? I’ve never been good at keeping secrets when it comes to great food! This Lemon Rhubarb Coffee Cake has a soft cake batter made from Savannah Smiles Lemon Cookies, a thick layer of rhubarb/berry jam and then gets topped with more batter and a lemony crumb topping, also made with Girl Scout Cookies!

Have you started to see Girl Scouts at your favorite grocery store, or in various places around town, selling cookies? It IS that time of year again. One of the best things about buying Girl Scout Cookies is they are ultimate feel-good treat because of what you support when you buy them! The Girl Scout Cookie Program is the largest girl-run business in the world where girls gain leadership and business entrepreneurial skills. Strong women like Barbara Walters, Martha Stewart, Katie Couric, Mariah Carey, Venus Williams, and Taylor Swift were all former Girl Scouts!

Another nice thing about buying Girl Scout Cookies is 100 hundred percent of the Girl Scout Cookie proceeds benefit the local Girl Scout council where you buy your box (boxes in my case), supporting local programs that help girls prepare for a lifetime of leadership. I was a Girl Scout when I was younger and also served as a Girl Scout troop leader for my daughter when she was growing up. I can tell you from personal experience, the Girl Scout Program is a great way for girls to gain confidence and learn important skills that will last them a lifetime!

Now, you may not have a Troop of hungry girls to feed, but I’m betting this Coffee Cake will be devoured by your family, friends, co-workers, church group, book club or anyone you wish to share with! I won’t even tell if you keep it for yourself. Girl Scout Promise. ;-)

Lemon Rhubarb Coffee Cake

Layered Lemon Rhubarb Coffee Cake

A delicious combination of fresh lemons, rhubarb, berries and Savannah Smiles Cookies! Makes enough to serve a hungry troop of Girl Scouts and their hard-working leaders!

  • For the Filling
  • 5 cups fresh Rhubarb, sliced into 1" pieces
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 medium lemon, juiced and zested (You will need approx 2 TBLS of lemon juice)
  • 1 cup sugar
  • 1/3 cup cornstarch
  • For the Cake
  • 2 1/2 cups all-purpose flour
  • 1/2 cup Savannah Smiles Girl Scout Cookies, crushed
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, cut into pieces
  • 1 1/2 cups whole milk
  • 2 Tablespoons fresh lemon juice
  • Zest from one large lemon
  • 2 eggs
  • For the Topping
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups crushed Savannah Smiles Girl Scout Cookies

Preheat oven to 350 degrees F.

Grease a 13 x 9 baking pan, set aside.

Prepare the filling by combining rhubarb and berries together in a large heavy saucepan. Add lemon juice and zest.

Cook over medium heat for about 5 minutes or until rhubarb has softened but not lost it's shape.

Combine sugar and cornstarch together in a small bowl, stir well.

Add sugar/cornstarch mix to the saucepan.

Bring to a boil, cook, stirring constantly for 2 minutes until thickened.

Remove from heat and set aside to cool while you make the cake.

In the bowl of your food processor, pulse 1 box of Savannah Smiles Girl Scout Cookies until they resemble coarse sand

Measure out 1/2 cup of cookie crumbs and put in a large bowl along with the flour, sugar, baking powder and salt.

With two forks, or a pastry cutter, cut butter into flour/cookie mixture until you have coarse crumbs

In a medium bowl mix together milk, lemon juice, zest and eggs.

Stir wet mixture into dry flour/butter mix.

Spread half the batter into prepared 13 x 9 baking pan

Gently spread cooled rhubarb/berry filling on the top of the batter, going almost to the edges of the pan, but leaving about a 1" border around the edges

Carefully spread remaining batter over the jam layer.

Before putting in the oven, make the topping.

In a microwave safe bowl, melt butter.

Stir in remainder (approx 1 1/2 cups) Savannah Smiles Cookie crumbs into butter and stir well until all the crumbs are coated and the mixture looks like wet sand.

Sprinkle topping over coffee cake batter

Bake coffee cake on the middle rack of your oven for 40 - 45 minutes.

If topping starts to brown too much, lightly cover the cake with a sheet of foil, but do not crimp down the edges

Cool on a rack for 30 minutes before cutting into squares
