Chicken, Zucchini, and Quinoa “One Pot” Meal

Instructions
  1. Preheat oven to 375 F.
  2. Grease square casserole dish (or rectangle for double the recipe).
  3. Line bottom of pan with zucchini.
  4. Distribute quinoa over zucchini.
  5. Pour broth over quinoa and zucchini.
  6. Place chicken on top of ingredients
  7. Sprinkle spices on top of chicken
  8. Bake for 1 hour
  9. Chicken should get crispy and the liquid should be absorbed by the quinoa. Enjoy for a wholesome filling meal. Best part- only 1 dish to wash (besides your plates)!
