Roasted Orange Chicken Legs



Preheat oven to 400°F.

In large mixing bowl, whisk together, orange juice, honey, olive oil, garlic, orange zest, salt and pepper. Place the chicken drumsticks in a large shallow dish or zip-lock plastic bag. Add orange juice marinade; cover and seal, then put in the refrigerator for 30 minutes or up to 1 hour.

Remove chicken from marinade and place in a single layer in a large baking dish or roasting pan. Add carrots, zucchini, potatoes and oranges to the pan and pour all the marinade evenly over the top.

Bake chicken, basting every 10 minutes, for 35 minutes or until an instant-read thermometer inserted in the chicken registers 165°F.

Remove chicken from the oven and place all the legs on top of the vegetables.

Turn your broiler to HIGH and broil chicken legs and veggies for 3 to 5 minutes or they reach a nice golden brown color.
