Preheat oven to 325 degrees F.
Spray an 8x8 square baking dish with non-stick spray, set aside.
In a large bowl whisk together the ground cookies, baking soda, salt and sugar.
Add all the nuts, 1/2 cup chocolate chips, coconut and dried fruits to the bowl. Toss gently with your fingers to combine.
In a small bowl, beat the egg and coconut extract together.
Pour the egg mixture over the fruit and nuts. Mix gently until everything is coated. It may not seem like much liquid, but the batter will hold together once everything is wet.
Spread the mixture in prepared pan. Press down gently to distribute evenly across the pan.
Bake for 35-40 minutes until the tops of the bars are golden brown.
Cool the bars in the pan for 15 minutes, then remove from pan to a rack to cool completely.
Cut cooled bars into 18 pieces.
!For the Chocolate Drizzle
In a small, microwavable dish, heat remaining 1/2 cup white chocolate chips in the microwave on 50% power for 30 seconds. Stir until bowl is no longer warm. Heat again for an additional 30 seconds at 50% power, stir until smooth. Put melted chocolate in a plastic sandwich bag, close securely. Snip off a tiny corner of the bag and use it to drizzle chocolate over cooled bars
