Watermelon, Cucumber and Blueberry Salad
Don't store the cheese and fruit together or the cheese will get soft and melt into the fruit mixture. Keep them separate and combine only when ready to serve.
- 2 cups diced seedless watermelon
- 1 cup diced cucumber
- 1 cup fresh blueberries
- 10 mint leaves julienned
- juice and zest from two limes
- 1/2 cup Feta Cheese
Toss the watermelon, cucumber and blueberries together in a large bowl. Add mint leaves, lime zest and juice. Stir gently to combine. Chill at least 30 minutes. Serve fruit mixture topped with a sprinkling of feta cheese.
