Spicy Mussels with Wine and Chorizo

Steamed mussels in a spicy garlic, wine and chorizo sauce! Perfect for company or a special celebration!

Ingredients
  

  • 8 Tablespoons 1 stick unsalted butter
  • 1 medium size brown onion diced
  • 2 large shallots diced
  • 8 cloves of garlic minced
  • 1/4 - 1/2 teaspoon red pepper flakes adjust to your personal preference
  • 2 cups dry white wine I used Yellow Tail, Pinot Grigio
  • 4 roma tomatoes seeded and diced
  • 5 1/2 oz dried spicy chorizo, diced
  • 1 teaspoon salt
  • Fresh ground pepper
  • 2 lbs mussels scrubbed and debearded
  • Fresh basil chiffonade, to sprinkle over the top of individual servings

Instructions
 

  • Melt butter in a large, heavy stockpot over medium heat. Add onions and shallots; cook, stirring occasionally, until soft, about 4 minutes.
  • Add garlic and red-pepper flakes; cook, stirring occasionally, about 2 minutes, taking care not to burn the garlic.
  • Add wine to the pot and bring the liquid to a boil.
  • Add tomatoes and chorizo. Reduce heat to medium-low and simmer about 10 minutes, stirring occasionally.
  • Season with salt and fresh cracked pepper.
  • Add cleaned mussels. Cover and continue to cook, shaking the pot occasionally, until mussels open, about 8 - 10 minutes. (discard any unopened mussels)
  • Add basil; toss. Serve immediately with crunchy french bread!
