Winter is here and I can’t think of a better way to start 2020, than with a collection of 10 Winter Soups & Stews. Comforting classics are the theme here. Imagine yourself enjoying a hot mug of soup tucked under your blanket on the couch, binge-watching Outlander, or whatever Netflix/Disney+ series currently captures your attention. (Mandalorian anyone?) Perhaps you’ll be with your family around the kitchen table, laughing over the days activities. We’re going to start with one of my all-time favorites, Classic French Onion Soup. Big and beefy, dripping with cheese and more caramelized onions than should be legal. Oh man! Make extra, you’re going to need it!
From Lauren Caris Cooks, this Vegan Minestrone Soup has chunky, warm vegetables mixed with a few pasta pieces and is the perfect way to curl up on a winter evening.
This easy Vegetable Jambalaya from Taste Love and Nourish has amazing flavor with just a bit of spice. It will warm your belly when the weather is chilly!
Thai Chicken Soup from A Farm Girl Dabbles is hearty with chicken and sweet potatoes, and bursting with all kinds of freshness. Add a little heat, or a lot, it’s all up to you! No matter what you do, this one may quickly become a family favorite!
Of course, we can’t have a soup roundup without a few Instant Pot recipes! This is a new one from The Cookie Rookie for 5 Spice Beef Stew and it will blow your mind!
Another favorite around our house during the winter is this Chicken Tortilla Soup. Squeezing a bit of fresh lime over the top, will take this soup straight over the top!
