February is here and that means, Valentines Day. While not my favorite holiday (though I am 100% behind the idea of chocolate for any occasion!) it is a good time to brush up on our “Dinner for Two” skills. Romantic dinners don’t have to be reserved for Valentines Day. Date Night IN is a good reason to cook and certainly much easier on the wallet. And, as we are still transitioning into this first year of being empty-nesters, dinners for two is a daily occasion here, so I’m always happy for more options. This list of 10 dinners for two can be made every night of the week or save them for something special. It’s all up to you!
10 Dinners for Two!
How about this Linguine with Meyer Lemon Mascarpone Sauce from The Hanging Spoon? Ohhhh my! Plus it’s made with Whole Wheat Linguine noodles, so it’s good for you too!
I’m all about the pasta when it comes to easy dinners for two. Most of the time it comes together quickly and is extremely versatile! Case in point, this Skillet Chicken Sausage dish from Healthy Nibbles & Bits!
And you simply can’t go wrong with anything from What’s Gaby Cooking. This hands-down-favorite of Linguini with Clams ranks right up there with my Steamed Mussels!
Since I mentioned them, of course we’ll add these Spicy Mussels with Wine and Chorizo to the list!
Steak Diane slathered in mounds and mounds of mushrooms sounds like a great way to spend an evening! What about you?
Let’s get a bit more casual now. How about Deep Dish Pizza for two? This recipe is great for movie nights or when you are looking for something fun to do together as a team!
Yes, more Mascarpone! Who doesn’t love cheese? This time, we’re going to stuff it into chicken for an easy, yet hearty Chicken Stuffed Herby Mascarpone dinner that can be on the table in less than 30 minutes.
Stir Fry dishes are another great way to use up those leftover veggies (because if you’re anything like me you’re still buying too much food to feed just two people) and they come together quickly too! This quick Beef with Snow Peas is one I come back to again and again!
Vegetarian Tacos for Two, from The Sunday Supper Movement are made with roasted vegetables and your own salsa! These will make a great addition to both your Meatless Monday Meals as well as Taco Tuesdays options!
And finally, let’s take it back to Seafood with this Roasted Salmon and Potatoes recipe from A Couple Cooks!
I hope this gives you a few simple ideas to create some delicious dinners for two! Enjoy my friends! If you do make one of these dishes, please tag the original authors on Instagram!
