Most people refer to the salad above as “Cobb Salad.” For me however, it’s always been a Kitchen Sink Salad. You can toss in almost anything, but the kitchen sink and it will be amazing. I mean, c’mon! Look at it! Lots of delicious little bites of lots of delicious little things. How simple is that? Use leftovers from the weekend and make a hearty (and easy!) weekday dinner salad.
The best way to do this? Cook a few extras during the weekend. Add an extra chicken breast to your BBQ Saturday night, then save it. Fry a few extra strips of bacon at Sunday brunch. Hard boil some eggs during the football games Sunday afternoon. Dice an extra tomato while you’re making salad for Sunday dinner. Of course, you can make Cobb Salad on purpose, but with a little bit of pre-planning, you don’t have to. Don’t ya love it when things are easy?

- In a large, individual salad bowl, place 2 cups chopped lettuce, one sliced hard boiled egg, ¼ of the diced avocado, 1/4 of the crumbled bacon, ½ of a diced tomato, ½ cup diced chicken breast and ¼ cup cheese.
- Salt and Pepper to taste.
- Repeat for remaining three salads
- Dress with your favorite salad dressing.
