Happy Friday Friends! This week marks Dinner Divas Week 69 Dude! Ok, you knew *someone* was going to make a cheesy movie reference, right? Bonus points if you can tell me what movie it’s from!
Can you believe it’s already the middle of August? Are your kids or grandkids back in school? It seems strange to me to be going back to school in August, but it’s becoming more common here in Southern California. The temperature outside certainly doesn’t scream “Back To School.” We’ve been hitting triple digits for several weeks now. Well, no matter how you are spending August, back to school or with your toes still in the sand, we have another terrific menu for you! Your week will be filled with healthy vegetarian lasagna, homemade fried rice and what week isn’t complete without pizza?
How does Dinner Divas work? Every Friday morning, a new menu plan will be posted. It will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Dinner Divas Weekly Menu Plan – Week 69 Dude!
Erin from The Speckled Palate has Meatless Monday covered beautifully with her Vegetarian Spinach Lasagna with Ragu Homestyle Sauce! This is a simple and delicious meal layered with no-boil noodles, a cottage cheese-ricotta mixture, sautéed spinach and mozzarella. Comfort food that’s perfect to start the week!
My Homemade Fried Rice will use up any leftover takeout rice you have in the refrigerator from the weekend! Even if we don’t have leftovers from our favorite Chinese restaurant, every time I make rice, I always make extra to have for other dishes later in the week. It’s a great time saver, especially as the weeks start to get busier.
A fast and easy dish that makes it to the table in under 15 minutes! Cheryl from Pooks Pantry has a Garlic Lemon Quinoa with Vegetables that is a fantastic way to use up all of the leftover bits of vegetables hanging around in your refrigerator. Use whatever vegetables you have on hand as this recipe is meant to be flexible!
Kirsten from Comfortably Domestic makes grilling flavorful, succulent pork steak a snap with her Grilled Pork Steak! Flavors adjust easily to suit personal taste or scale up or down as the need arises. This is one recipe that will come in handy for years to come!
This Sausage Gravy Pizza from Jenni Fields Pastry Chef Online is a take on a sausage hoagie with peppers and onions. It’s full of flavor, but feels light thanks to the vegetables and a lovely, crisp crust. Plus, it’s Friday and Friday deserves pizza!
Now it’s time for my favorite part of the week – DESSERT! Such sweet offerings! You’re going to love these! Pimm’s Cups are refreshing summertime cocktails that go down easy on hot days. Why not take a classic Pimm’s Cup… and transform it into a popsicle? That’s what The Speckled Palate did with these Pimms Pops. A very adult summer treat!
We finish the week with my Triple Layer Cappuccino Brownies! Deeply chocolatey and spiked with espresso, both in the bottom brownie layer and in the chocolate glaze on top. A sweet creamy cinnamon vanilla cheesecake center rounds it all out perfectly. And no, you don’t have to share.
