I love comfort food. Hearty casseroles and thick, rich soups are a staple in our house during the winter. (Or at least what passes for “Winter” here in Southern California!) In the Spring though, my body starts craving fresh veggies and simpler dishes. And, really, there is nothing simpler than my very own Pesto Shrimp and Zoodles! We’ll just eat it and pretend it’s Spring!
