Hi friends! Guess what? This week I get to be part of the “Dinner Divas Weekly Menu Plan!” I’m thrilled to be sharing with such a talented group of bloggers. So, who/what are the Dinner Divas? I’m glad you asked! Dinner Divas is a group of bloggers organized by Cheryl from Pooks Pantry and includes Jenni from Jenni Fields Pastry Chef Online, Erin from The Speckled Palate and Kirsten from Comfortably Domestic.
Here’s how it works: Every Friday morning, the Dinner Divas share a new menu for the week. It consists of 5 dinner options, plus 2 extra dishes, that could be a side dish, dessert, drink etc. The menu plans feature (mostly) healthy, seasonal foods that don’t take all day to prepare. (Thank goodness for that! Especially during these busy summer months, right?) Getting a weekly menu every Friday morning gives you the chance to make your shopping list and get organized for the next week. Obviously, you can make what you wish or not. We’re just here to help with ideas and options. I can’t wait to get started!!

DINNER DIVAS WEEKLY MENU:
Ground beef burgers, stuffed with sharp cheddar cheese, are the perfect compliment to a summertime celebration. These Juicy Lucy Burgers from The Speckled Palate are a showstopper, whether you’re hosting folks for a barbecue or want to avoid the heat indoors.
This Spiralized Beet, Apple and Spinach Salad from Pooks Pantry is made up of colorful spiralized veggies on a bed on baby spinach, lightly dressed with a tangy vinaigrette, a sprinkle of roasted pepitas for crunch and a handful of crumbled feta for extra deliciousness.
Thai Red Curry Coconut Shrimp with Sweet Potato Noodles also from Pooks Pantry, are quick, easy and done in about 3o minutes! Getting dinner on the table in less than a half hour has never been so delicious.
We’re almost to the weekend and this Whole Wheat Pita Bread from Pastry Chef Online yields maximum flavor with minimal effort. I can’t wait to give this one a try! I mean, homemade Pita Bread? Yes, please!
Seafood seems to be the theme for our Anniversary most years and these Spicy Mussels in Wine and Chorizo is still one of our favorites! Make this Friday night one to remember!
Cream Biscuits with White Sausage Gravy from The Speckled Palate are the ideal breakfast or brunch food if you’re looking for something savory, decadent and utterly delicious!
This Old-Fashioned Vinegar Pie from Pastry Chef Online will make you feel like one of those hardy pioneer bakers who were able to make something delicious from almost nothing. It is so good and easy to make!
WOW! Are you hungry now? I am! What a delicious week of ideas, including breakfast and pie for dessert? Oh yeah!
