Hi friends! We are back for another decadent week of menu ideas from the Dinner Divas Team! This is week 70 (can you believe it?) and every single suggestion is making my mouth water! From a new twist on Pasta Salad to BBQ Chicken Grilled Flatbread to my favorite flavors meeting together in an Ice Cream Pie, I’m ready to start my grocery list right now!
So, how does Dinner Divas work? Every Friday morning, a new menu plan will be posted. The menu will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Getting the weekly menu posted on Friday gives you the chance to make your shopping list and get organized for next week. Let’s dive right in to this weeks deliciousness!
Dinner Divas Weekly Menu Plan – Week 70
Meatless Monday is not only popular, it’s a great way to set the tone for a healthy week! This Mexican Pasta Salad from Pastry Chef Online is full of fresh, bright flavors with just enough spice to keep things interesting. I love the flexibility of this dish and the Green Goddess Dressing that goes with it is stellar! Try it tonight!
Grilled BBQ Chicken Flatbread from The Speckled Palate makes the perfect centerpiece for an outdoor party. Studded with fresh summer veggies and grilled barbecue chicken, this scrumptious flatbread serves a crowd! This is a dish that’s sure to please everyone in your family!
My very own Instant Pot Spaghetti and Meatballs is one of the fastest ways to get dinner on the table in the middle of the week. Start to finish, it takes just over 30 minutes to create this delicious dish and cleanup couldn’t be easier! You’ll be amazed at how easy this is to put together and how much better you’ll feel serving something homemade vs going through the drive-thru.
From Pooks Pantry, Moroccan Chicken Meal Prep Bowls are a great way to add a little spice to your lunch (or dinner!) Spice rubbed chicken breasts, sweet, dried apricots, nutty chickpeas and crunchy pistachios on a bed of romaine lettuce prove that healthy doesn’t have to be boring.
Strawberry Mango Salad with Strawberry Poppyseed Vinaigrette! Comfortably Domestic put together this salad composed of sweet, ripe strawberries, juicy mango chunks on a bed of fresh greens, with a little leftover chicken and a few sunflower seeds for added protein. And again the stellar salad dressing makes it all come together deliciously!
There’s nothing like tomatoes, cucumbers, peppers, corn, etc. during the summer months! This Israeli Salad from Pooks Pantry makes wonderful use of what most people grow in their gardens! If you are lucky enough to grow some of your own veggies, you may not have to go farther than your back yard to get your ingredients!
Comfortably Domestic finishes the week with dessert in one of my favorite flavors!! Mocha Cappuccino Ice Cream Pie This decadent pie is comprised of coffee ice cream, chocolate chips, sweetened whipped cream, drizzles of caramel and hot fudge, nestled in an Oreo cookie crust. I may be in love with every single word in that sentence.
