Hi friends! The hot days of August are fleeting and before you know it, temperatures will be dipping again. Thank goodness! For now, let’s take full advantage of these end of summer recipes from the Dinner Divas. Week 71 has a Peach Moscow Mule and a beautiful summer vegetable gratin casserole plus THREE Instant Pot recipes that I’m pretty sure will be going into our dinner rotation on a regular basis!
So, how does Dinner Divas work? Every Friday morning, a new menu plan will be posted. The menu will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Dinner Divas Weekly Menu Plan: Week 71
Comfortably Domestic starts off the week by sharing a Meatless Monday Meal that can be assembled with most any seasonal vegetable. This Summer Vegetable Gratin utilizes zucchini, yellow summer squash, potato, onion, asparagus, and tomato with a bit of sharp white cheddar cheese sprinkled over top! Sounds perfect to me!
I know next to nothing about the Keto Diet, but this Keto Instant Pot Crack Chicken from Jenni Field’s Pastry Chef Online has both spicy and smoky Mexican flavors and is made in the Instant Pot. Sign me up!
This pulled pork from The Speckled Palate also cooks in the Instant Pot and serves a crowd! First, homemade PEAR barbecue sauce! Yep, you read that right! Next, toss together her pear coleslaw, and serve them together. I bet this Pear BBQ Pulled Pork with Pear Slaw will become a seasonal favorite in your house too!
The end of summer means Hatch Chile Season! I LOVE Hatch Chiles and my simple Hatch Chile and Chicken Skillet Dinner takes full advantage of those delicious green chiles only available this time of year!
Instant Pot Split Pea Soup with Ham from Pooks Pantry is the third Instant Pot recipe this week! It is a classic version of this hearty soup with smoked ham hock with crispy cubes of diced ham served as the perfect garnish! Ham Croutons, y’all! That’s enough for me to give this one a try!
With Labor Day weekend coming up, these Peach Moscow Mules from The Speckled Palate are a fabulous fun drink for your family gatherings! A unique twist on a classic Moscow Mule, they taste like a slice of peach pie on a hot day. Sounds like the refreshing and tasty way to end summer!
These scream SUNDAY BRUNCH! What are they? They’re Hawaiian Roll French Toast Muffins from Jenni Field’s Pastry Chef Online. Ohhhhhman! She had me at Hawaiian Roll, but then went and added a streusel topping and apple cider syrup… I’ll take two (four) please!
