Looking for a great summer salad? How about a Grilled Chicken and Peach Salad?
This is perfect for a BBQ or family gathering. The recipe has been bouncing around in my head for a while so when I had an opportunity to create a recipe and do a review of Organic Girl Greens, I knew it was perfect timing for this salad to come to life!
I discovered Organic Girl Greens at Camp Blogaway (They had a great salad shaker in our swag bags!) but I’d never tried their products. Lucky for me, Organic Girl ships! Picked fresh and delivered overnight to your door. I was very impressed with the quality of these greens. Everything is triple washed and packaged in a recyclable clamshell. They don’t use any synthetic pesticides and they are committed to growing only the best quality produce. They are also “fanatics about freshness” and they stand behind that! Here was the amazing box of delicious goodies I received…
Honestly, I loved everything! My favorite though, was the baby spinach. We ate it raw out of the container, tossed it in a few dinner salads and I made a breakfast smoothie with the last of it. It was so good! (recipe coming later!) I have to admit, there was another bag of baby spinach in the house and the flavor difference between the two was very distinct! The Organic Girl Greens were so much better! They were crisp, flavorful and you can taste the quality. I can’t see myself ever buying anything else. They are THAT good!
Another favorite (and the base for this delicious salad) was the Five Happiness Tasty Salad Mix. It contains a mixture of Chinese baby Bok Choy leaves and sweet baby greens. The baby Bok Choy adds a lot of texture and flavor to the salad. It elevated it beyond a simple green salad and made all the other ingredients shine. Grilled chicken and grilled peaches, paired with an easy ginger and garlic dressing add an Asian twist I know you’re going to love!
I suppose you want the recipe for this amazing salad? Ok, I’ll give it to you. I did everything on my cast-iron grill pan, but feel free to use your BBQ outside too. This is one of those simple meals we will be having often over the summer! Full of flavor and great for hot days when you don’t want anything too filling.
Grilled Chicken and Peach Salad!

Ingredients
1 tub Organic Girl Greens Five Happiness Salad Mix
1 1/2 cups Grilled Chicken, chopped
3 peaches, sliced and grilled
2 TBLS vegetable oil (for grilling peaches)
2 TBLS toasted sesame seeds
1/4 cup green onions, sliced
Chinese Crunchy noodles for croutons
Asian Ginger and Garlic Dressing
2 TBLS Rice Wine Vinegar
1 1/2 TBLS Soy Sauce
2 tsp ginger, freshly grated
1 1/2 tsp sesame oil
1 1/2 tsp minced garlic
1/2 TBLS honey
1/4 tsp red pepper flakes
1/3 cup grape seed or vegetable oil
Instructions
Pre-heat your oven to 350 degrees.
Using an oven-proof cast-iron grill pan, over medium heat, grill one large chicken breast for five minutes. Rotate the chicken 90 degrees after three minutes to produce criss-cross grill marks. Flip the chicken breast over and repeat the process on the other side, grilling for just four minutes total on the second side.
Place the pan with the grilled chicken in the oven and bake for 10-15 minutes to finish cooking or chicken reaches an internal temperature of 140 degrees.
Remove from the oven and let cool. (Note: This can be done the day before)
Wash grill pan to use again for the peaches.
Cut peaches in half and remove pit. Slice each half in half again so you have four thick slices from each peach.
Heat your grill pan over medium heat.
Brush each side of the peaches lightly with vegetable oil.
Place on pan and grill for 1 – 2 minutes per side, twisting 90 degrees after 30-45 seconds to create criss-cross grill marks.
When peaches are done, remove from the grill and set aside to cool.
While the peaches are cooling, assemble the salad dressing.
Place all dressing ingredients in a jar with a tight fitting lid and shake for 20 seconds to combine. (Note: This can also be done the day before. The flavors will be richer if you make the dressing and leave it in the refrigerator overnight)
Chop cooled chicken into bite-size pieces. You should have approx 1 1/2 cups of chicken.
Gently remove skin from the grilled peaches. It should slide off easily with your finger tips.
Dice grilled peaches to the same size as the chopped grilled chicken, or cut them into strips (as in the photo)
Place Organic Girl Five Happiness Salad Mix in a large bowl.
Add sliced green onions and toasted sesame seeds to the bowl with the salad mix.
Add chopped grilled chicken and chopped grilled peaches.
Pour 1/4 of the dressing over the salad and toss gently to combine.
Serve with Chinese Crunchy Noodles as croutons.

Notes
You can make this salad with leftover grilled chicken or store-bought rotisserie chicken too. Make the dressing the night before so the flavors have time to marry. You will have extra dressing. Use it as a marinade for chicken or beef, or save it for another salad!

All of these greens look SO fresh and yummy, I’m not sure WHAT I’d make first! I can picture a great big tuna salad on them, though :)

I’ve been making a salad of chicken, cucumber and mixed greens with some chopped roasted unsalted peanuts and a spicy peanut dressing which is really good (verging on addicting actually)

Organic Girl 5 Happiness Tasty Salad Greens Mix: These salad greens sound delicious, with or without anything else. I have white peach balsamic vinegar that I would put on top of the greens. I might add cucumber, raisins or cranberries, a bit of grated cheese, and whatever else struck my fancy before the balsamic. Or not. Or both – have some plain salad and some salad with “stuff” in it. Definitely going to have to try the peach & chicken salad or just peaches & chicken, no salad. What potential combinations there are.
This salad looks absolutely bodacious. And, very easy to make smaller portions.
