It’s been crazy here the last few weeks. My oldest son got married and between wedding prep, the wedding itself and the new cookbook launch, WOW! I’m ready for a break. Thank goodness I have several “go-to” recipes that come together quickly, otherwise, we’d have been eating nothing but fast-food for the last month.

This recipe is from the new “Asian Favorites” chapter of our new cookbook. Next to desserts (because you know me and sweets!) this is my favorite chapter of the book. So many wonderful options to have in your Instant Pot. Even if you’re not Gluten Free, you can enjoy these recipes. Simply swap our regular ingredients for the GF versions. However, I do suggest you try Coconut Aminos in place of regular or even reduced sodium soy sauce. It’s a game changer! Lots of added flavor and much less sodium (73% less) than traditional soy sauce.
