Hi friends! Guess what? These Instant Pot Teriyaki Meatballs are from the new “Gluten Free Instant Pot Cookbook!” Can you believe the new book is HERE? It’s crazy! One of those pinch me moments, for sure. Part of it still doesn’t seem real. How is it possible to have two cookbooks in less than a year? Well, it’s all because of YOU! I appreciate all your support and encouragement, recipe testing and feedback. This book would not have happened without you!
So let’s dig in to a few of the recipes I’m allowed to share with you. Are you looking for a main dish? Appetizer? Buffet favorite? I’ve got you covered with this recipe. You might be wondering if a simple meatball can be all these things? Absolutely!
These tender, juicy meatballs come together quickly and get cooked in an easy home-made teriyaki sauce. Ground turkey in place of traditional ground beef allows the meatballs to be tender and free from potentially harmful fillers. We also swapped out gluten-filled soy sauce with coconut aminos for a gluten-free alternative.
One of the biggest changes we’ve made in our house since creating these recipes, is switching to Coconut Aminos. Not only is it a great gluten-free alternative, it’s also so much less sodium than traditional soy sauce and even the “reduced sodium” soy sauce. Plus, to be honest, I like the flavor better. If you’re not gluten-free, I want you to make these anyway. Use your favorite ground meat: beef, pork, chicken, turkey. It all works well. You can even turn these meatballs into a main dish by serving them over rice or egg noodles. I say go for it! What’s a little creativity among friends?
