It must be the weather. I’ve been having serious comfort food cravings lately. Of course, it could also be the emotional aspect of dealing with the loss of a parent and trying to help the other navigate through a new life alone after 45 years of being together. I’m guessing it’s probably the second and I’m just blaming it on the first. Have you been to Southern California? We don’t really have weather that involves needing comfort food. Regardless of the reason, this Vegetable Bolognese is kinda hitting the spot for me. It’s savory, hearty and thick. The perfect accompaniment to pasta or to serve over hamburger buns. Even eaten with a big spoon, straight out of the pot and a hunk of garlic bread on the side would be delicious. Which may or may not have happened last week…
Leaving the meat out of this dish and substituting in red lentils and walnuts for the same “meaty” texture, along with a LOT of vegetables, means you can really feel good about serving it to your family. No more drab Meatless Monday! We got this!
My Instant Pot has been put to use a lot lately. It’s helped get dinner on the table when I haven’t wanted to cook. Quick and easy meals have saved us from a few weeks of nothing but Starbucks and McDonalds.
