Hi friends! You are never going to guess the secret ingredient in this Layered Lemon Rhubarb Coffee Cake!
I’ll give you a hint. It involves cookies! That’s right, cookies.
Did you figure it out? I guess the picture gave it away, didn’t it? I’ve never been good at keeping secrets when it comes to great food! This Lemon Rhubarb Coffee Cake has a soft cake batter made from Savannah Smiles Lemon Cookies, a thick layer of rhubarb/berry jam and then gets topped with more batter and a lemony crumb topping, also made with Girl Scout Cookies!
Have you started to see Girl Scouts at your favorite grocery store, or in various places around town, selling cookies? It IS that time of year again. One of the best things about buying Girl Scout Cookies is they are ultimate feel-good treat because of what you support when you buy them! The Girl Scout Cookie Program is the largest girl-run business in the world where girls gain leadership and business entrepreneurial skills. Strong women like Barbara Walters, Martha Stewart, Katie Couric, Mariah Carey, Venus Williams, and Taylor Swift were all former Girl Scouts!
Another nice thing about buying Girl Scout Cookies is 100 hundred percent of the Girl Scout Cookie proceeds benefit the local Girl Scout council where you buy your box (boxes in my case), supporting local programs that help girls prepare for a lifetime of leadership. I was a Girl Scout when I was younger and also served as a Girl Scout troop leader for my daughter when she was growing up. I can tell you from personal experience, the Girl Scout Program is a great way for girls to gain confidence and learn important skills that will last them a lifetime!
Now, you may not have a Troop of hungry girls to feed, but I’m betting this Coffee Cake will be devoured by your family, friends, co-workers, church group, book club or anyone you wish to share with! I won’t even tell if you keep it for yourself. Girl Scout Promise. ;-)
