I’m Ann from Sumptuous Spoonfuls and I’m so excited to be guest blogging for Sara here at My Imperfect Kitchen today. I just love Sara’s recipes and her “it’s okay to be imperfect” philosophy because that’s how I feel about cooking (and life) too. I am constantly trying new things … sometimes my experiments turn out great, and sometimes they don’t. Sometimes the ones that don’t work at first lead me to something even better. Some of my best recipes have been created that way.
Today I have a marinade for you … if you’ve ever made chicken on the grill that came out too dry, this marinade is a great remedy. It’s one of those recipes that started out not-so-great, so I added a few more things to it until it tasted just right. Once I got done tweaking it, it was just marvelous!
This marinade is wonderful on chicken, but also it’s great on fish … if you use it on fish, marinate for only about 15 minutes or so the fish will get too soft and mushy.
Marvelous Marinade for Grilled Chicken
Ingredients:
¼ cup extra virgin olive oil
¼ cup soy sauce
4 cloves of garlic, peeled and chopped
Juice of 1 lemon
¼ cup white wine
½ cup nonfat Greek yogurt
2 Tablespoons marmalade (I used my ginger kumquat marmalade)
1 – 2 Tablespoons brown sugar
2 teaspoons Mrs. Dash seasoning
Directions:
Whisk together all the marinade ingredients.
Put your chicken pieces in a bowl and pour the marinade over. Cover and refrigerate for at least an hour, preferably longer. Overnight is good.
Fire up the grill, set the chicken over the hot coals briefly to sear the skin, then move to indirect heat on the grill to cook until the chicken is done. You can poke it with a knife to check for doneness … the juices will run clear when the chicken is done.
