Hi friends! Today, we’re taking a trip to Melissa’s Produce to meet award-winning Author (of 14 different cookbooks!) Deborah Madison.
Deborah Madison is an advocate for farmers and local farmers markets. She is well known for her seasonal and vegetable based cooking. Her latest cookbook “In My Kitchen” takes you on a narrative journey into her New Mexico kitchen, where she shares stories and personal reflections on more than 100 of her most beloved recipes.
We were fortunate to sample a few of these favorites. First up was Deborah’s Baked Ricotta Infused with Thyme. I never thought about baking ricotta on it’s own, but this was delightful! Served on a toasted crostini, it’s a perfect little appetizer.
This lovely Citrus and Avocado with Lime-Cumin Vinaigrette and Shredded Green salad is not only vegan, it’s gluten free! It has pistachios with diced jalapeño peppers for crunch and heat. You can see two of Deborah Madison’s other books in this picture too!
Her hearty Lentil Minestrone with Kale was a crowd favorite. With dark green lentils, carrots, celery, garlic, assorted pasta and of course Kale, this hearty soup is perfect for a chilly night.
My favorite was the Potato and Chickpea Stew with Sautéed Spinach. I love the fingerling potatoes, sweet red bell peppers and smoked paprika in this recipe. Deborah says the secret to this one, is to serve it with a dollop of her Romesco sauce on top. Divine!
Then of course, we had dessert! There was a sweet and tart Rhubarb-Raspberry Compote (served with classic shortbread cookies) and Walnut Nugget Cookies. I make no apologies for my love of Rhubarb. This compote was simple and flavorful. The addition of orange zest gives it a little extra that I really enjoyed.
We were given a copy of Deborah Madison’s gorgeous cookbook “In My Kitchen” and she kindly signed them for everyone. I really enjoyed meeting Deborah and hearing her stories about life in her kitchen and the things available at her local farmers market.
