Hi friends! I finally cracked the code on how to make juicy pork chops. Recently, I came across this super simple recipe from Lodge Cast Iron. Salt and Pepper Pork Chops. Sometimes simple is so much better than the over-thinking I do when it comes to making dinner. These pork chops are brushed with oil, then sprinkled with salt and pepper. That’s it. Nothing else! Can you believe it?
I’ve tried all the fancy rubs and seasoning mixes. There have been brined pork chops, grilled pork chops, smothered pork chops and stuffed pork chops. Obviously, they haven’t been a smashing success because I’ve never put a chop recipe on my blog. That is, until now. None of those aforementioned chops have been as moist and juicy as these. They start on the stovetop and finish in the oven. Honestly, it’s the cast-iron pan that makes the difference. It holds heat so well! Creating a nice crust to begin with, keeps all the juices inside and because it’s finished in the oven, there is less risk of drying out.
Let’s start a mantra, shall we? Remember the saying of KISS: Keep it simple Sara? I know it’s supposed to be “Keep it Simple, Stupid!” but I never liked calling anyone or anything stupid. So we’ll sub in Sara or Sweetheart or even Keep it Super Simple! Let’s just make good food prepared with minimal extra stuff. This can be applied to life too. Keep it simple. These Salt and Pepper Pork Chops can’t get much simpler, so we’re off to a great start!
Things have been so crazy here lately. Between watching the grandkids, wedding planning, my Step-Dad passing, my Mom moving closer to us, my second cookbook coming out and just LIFE. Whew! I am thrilled to put anything on the table that isn’t Starbucks or McDonalds right now.
