This is a 30 minute meal – start to finish. To be honest with you, I’m not sure which I like better, the Seared Salmon or the Avocado Sauce. The sauce could be used as a salad dressing, put over chicken or pork. Heck, you could even use it as a dip for your favorite vegetables!
Some fresh cherry tomatoes and cilantro top the dish, making this dish perfect for a quick summer dinner.
Don’t be shy about using the habanero! It gives depth to the sauce and while you think it may be too spicy, it’s not. Trust me on this one. I’m not a fan of super spicy things and I think this sauce is perfect! If you want more of a kick, keep the seeds from the chilis in the sauce when you blend it.
This recipe is from a book called “Milk Street, Tuesday Nights” by Christopher Kimball. The book was sent to me as part of a large group of cookbooks (over 40!!) I was fortunate enough to be judging in a culinary cookbook competition. There are a LOT of great recipes in here but this one stood out, both for simplicity and taste. Plus, this cookbook happened to win in it’s category, so you know there is something great happening here.
