It’s getting to be the time of year when I switch from wanting warm, hearty comfort food dinners, to craving something light, cool and easy. This refreshing watermelon, cucumber and blueberry salad is a perfect option for those hot summer nights! With temperatures already climbing into the upper 90’s here in Southern California, I have a feeling it’s going to be a long summer!
This recipe is so simple and I love how flexible it is too. There are only a few ingredients. You can use it as a salad for dinner, or cut the fruit into smaller pieces to use it as a side dish or fruit salsa! It would be lovely over grilled fish or even served with cinnamon tortilla chips as a light appetizer. Isn’t it great when things come together like that?

Watermelon, Cucumber and Blueberry Salad
Ingredients
- 2 cups diced seedless watermelon
- 1 cup diced cucumber
- 1 cup fresh blueberries
- 10 mint leaves julienned
- juice and zest from two limes
- 1/2 cup Feta Cheese
Instructions
- Toss the watermelon, cucumber and blueberries together in a large bowl. Add mint leaves, lime zest and juice. Stir gently to combine. Chill at least 30 minutes. Serve fruit mixture topped with a sprinkling of feta cheese.
