Meatless Monday keeps your healthy resolutions on track with my Winter Pear and Hazelnut Salad. This salad is full of texture from the crunchy hazelnuts, to the soft pear and the delightful salty bit from the cheese. Don’t forget the fresh cracked pepper, it’s a game-changer over the pear!
This Easy Lentil Soup recipe from Pooks Pantry is a classic for a reason. It is an easy soup to make, it’s full of vegetables and it’s delicious. It is satisfying, but does not leave you feeling heavy. If you are a soup lover like me, you’ll want to save this easy recipe for those evenings when a bowl of soup makes the perfect supper.
