Crock Pot Chicken Posole is comfort food made easy! It only requires a few minutes to put together in the morning and by dinner, this soup will be ready and waiting! After all, it’s the season of warm, hearty foods. It’s also the season of hectic school schedules, back to school nights, soccer practices, homework, and weekly trips to Disneyland… oh wait, maybe that last one is just me? Let’s slow down and gather around the table for a nice Sunday Supper that not only tastes great, but is good for us too! Chicken Posole #SundaySupper

Slow Cooker Chicken Posole Soup

Think of posole as the mexican version of chicken soup! This is the ultimate comfort food for chilly nights.

  • 2 cups water
  • 2 cups unsalted chicken stock
  • 1 cup chopped yellow onion
  • 1 cup chopped assorted hot peppers (use more or less depending on how you like your spice level. I used a mixture of Hatch Chiles, Anaheim's and Red Fresno peppers)
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon chopped garlic
  • 2 teaspoons dried oregano
  • 1 (28-oz.) can white hominy, drained
  • 2 (10-oz.) bone-in chicken breasts, skinned
  • 1/2 cup finely chopped peeled tomatillos
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon kosher salt
  • 1/3 cup sliced radishes
  • 1 1/2 ripe avocados sliced
  • Fried tortilla strips or large tortilla chips

Combine the first 8 ingredients (water through hominy) in the crock of a 6-quart slow cooker.

Add chicken breasts to stock mixture; submerge in liquid.

Cover and cook on LOW for 6 - 8 hours.

Carefully remove chicken from cooker and let cool for a few minutes. When chicken is cool enough to handle, remove bones, and shred or roughly chop chicken into large pieces.

Return chicken to slow cooker; stir in tomatillos, cilantro, juice, and salt to taste.

Divide soup among 6 bowls; top evenly with radishes, avocado and tortilla strips.
