Meringue Cookies!

Simple, sweet, fun. That’s the beauty of these Meringue Cookies. Simple ingredients transformed to something sweet and fun that everyone can enjoy. Childhood should be this way too. Sweet. Simple. Fun. Unfortunately, for children battling pediatric cancer, life can be anything but simple.

As a parent and grandparent, I don’t know what I would do if a child in our family were diagnosed with cancer. It’s a devastating disease. We have been blessed to have healthy children and grandchildren. For others though, that is not the case. While I can’t cure pediatric cancer, I can bake cookies! Cookies that could help a child have a sweeter life. So once again this year, I’m participating in the Good Cookie Food Bloggers Valentine’s Event!

Meringue Cookies C4KC

Organized by Julie from “The Little Kitchen” (Thank you Julie!) our goal is to raise $3000 for Cookies For Kids Cancer to help fund research for all forms of pediatric cancer. I’m not alone in this fight! There are over 40 bloggers participating this year, and we all have recipes to share! (The links are listed below!) There are plenty of mouth-watering options to help you have a sweet Valentines Day!

Cancer is the #1 cause of death by disease for children in the United States. Currently, there are over 40,000 children in our country actively battling cancer. Unfortunately, less than 4% of the National Cancer Institute’s budget goes to battle childhood cancer. Less than 4%!

You can make a difference by donating to Cookies for Kids’ Cancer! If you choose to donate, your donations are tax deductible since they are a non-profit organization! Amazing, right? If we raise $3000, a grand total of $12,000 will be donated to Cookies for Kids’ Cancer! How is that possible? Simple. Three wonderful brands: Dixie Crystals, Mediavine and OXO are matching what we raise dollar for dollar up to $3000 each. Now that is what I call sweet!

We are accepting donations through March 1st, so if you are able to help in any way, here is the link to follow: Donate here. Please join us in trying to give every child a sweet, simple and fun childhood, free from pediatric cancer.

Thank you!

Meringue Cookies - Cookies For Kids Cancer

These Meringue Cookies will melt in your mouth! Sweet, simple and fun to make with the kids.

  • 2 egg whites, room temperature
  • 1/4 teaspoon cream of tartar
  • a pinch of salt
  • 1/2 cup sugar
  • (optional) red food coloring

Preheat oven to 225 degrees F.

Line two baking sheets with parchment paper and set aside.

Place egg whites into a mixing bowl or the bowl of your stand mixer. (NOTE: It's important to have your egg whites at room temperature. This gives them as much lift as possible!)

Beat whites at medium speed until white and frothy.

Add cream of tartar and salt, then continue to beat the mixture until soft peaks form.

Once you've reached soft peaks, add sugar slowly (a few teaspoons at a time - don't rush it) until all the sugar has been added, it's completely dissolved and stiff peaks have formed.

Add in the food coloring (if you're using it) and then quickly put the meringue into a large piping bag.

Pipe heart shapes or create little meringue buttons on to the prepared baking sheets. If you don't want hearts or buttons, be bold and daring and create any shapes that make you smile!

Bake for 45 minutes and then turn OFF your oven. Don't open the door, (turn on the oven light if you must peek at them!) then just let the cookies hang out in the oven for an hour or two to cool and get crispy on the outside.
