Dubliner Cottage Pie Puffs

These hand-held Cottage Pie Puffs are bursting with Kerrygold Cheese and brushed with Kerrygold Garlic and Herb butter for a savory dinner time treat!

Ingredients
  

  • 4 Tablespoons Kerrygold Garlic and Herb Butter divided
  • 1 cup chopped onion
  • 20 oz ground turkey breast I used Jennie O
  • 2 Tablespoons Wondra flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 2 teaspoons minced garlic
  • 2 Tablespoons tomato paste
  • 1 cup chicken broth
  • 2 teaspoons freshly chopped thyme leaves
  • 1 teaspoon freshly chopped flat-leaf parsley
  • 8.5 oz can peas and carrots
  • 1 cup shredded Kerrygold Dubliner Cheese
  • 1 egg beaten.
  • Puff Pastry Squares

Method
 

  1. Preheat oven to 375 degrees F.
  2. Line two baking sheets with parchment paper, set aside.
  3. Melt 2 Tablespoons Kerrygold Garlic and Herb butter in a 12 in skillet over medium heat.
  4. Add onion and cook until soft, but not browned. About 5 minutes.
  5. Add ground turkey breast to the skillet and cook until brown and crumbly.
  6. Sprinkle the meat with flour, salt and pepper, then toss to coat.
  7. Cook for an additional minute.
  8. Add garlic, tomato paste, broth, thyme, parsley peas and carrots to the pan.
  9. Reduce to heat to low, cover and bring to a low simmer, stirring often.
  10. Cook for 10-15 minutes or until the mixture has thickened slightly.
  11. Turn off mixture and allow to cool.
  12. While turkey mixture is cooling, melt remaining two tablespoons of Kerrygold Garlic and Herb butter in a small bowl. Set aside
  13. Place individual puff pastry squares on prepared baking sheets.
  14. Place two Tablespoons cooled turkey mixture in the center of each square.
  15. Top meat with with a hefty sprinkle of Kerrygold Dubliner Cheese
  16. Brush edges of the pastry square with egg wash and fold over to create triangles.
  17. Crimp the edges of each triangle with a fork to seal.
  18. Brush each triangle with melted Kerrygold Garlic and Cheese Butter
  19. Bake at 375 degrees for 20 - 25 minutes.
  20. Immediately upon removing puffs from the oven, brush the tops again with any remaining Kerrygold Garlic and Cheese Butter and sprinkle with additional chopped parsley.
  21. Serve warm or at room temperature.
