Spicy Mussels with Wine and Chorizo

Steamed mussels in a spicy garlic, wine and chorizo sauce! Perfect for company or a special celebration!

Ingredients
  

  • 8 Tablespoons 1 stick unsalted butter
  • 1 medium size brown onion diced
  • 2 large shallots diced
  • 8 cloves of garlic minced
  • 1/4 - 1/2 teaspoon red pepper flakes adjust to your personal preference
  • 2 cups dry white wine I used Yellow Tail, Pinot Grigio
  • 4 roma tomatoes seeded and diced
  • 5 1/2 oz dried spicy chorizo, diced
  • 1 teaspoon salt
  • Fresh ground pepper
  • 2 lbs mussels scrubbed and debearded
  • Fresh basil chiffonade, to sprinkle over the top of individual servings

Method
 

  1. Melt butter in a large, heavy stockpot over medium heat. Add onions and shallots; cook, stirring occasionally, until soft, about 4 minutes.
  2. Add garlic and red-pepper flakes; cook, stirring occasionally, about 2 minutes, taking care not to burn the garlic.
  3. Add wine to the pot and bring the liquid to a boil.
  4. Add tomatoes and chorizo. Reduce heat to medium-low and simmer about 10 minutes, stirring occasionally.
  5. Season with salt and fresh cracked pepper.
  6. Add cleaned mussels. Cover and continue to cook, shaking the pot occasionally, until mussels open, about 8 - 10 minutes. (discard any unopened mussels)
  7. Add basil; toss. Serve immediately with crunchy french bread!
